Grapes are harvested by hand at optimal ripeness to ensure careful selection of Pinot Meunier and Pinot Noir clusters, preserving both purity of fruit and natural acidity. In the cellar, gentle pressing yields the finest juice, which is vinified in temperature-controlled tanks (and, depending on the parcel, partially in oak) to retain aromatic clarity while building subtle texture. After blending, the wine undergoes its second fermentation in bottle, followed by an extended period of aging on the lees, building finesse, complexity and the fine bead that define this Extra Brut Champagne. A low dosage is added at disgorgement, allowing the terroir-driven character to take center stage.
