Tasting Notes
In the glass, Moratti Cuvée More Pas Dosé presents a pale straw to light gold hue, animated by a fine, persistent mousse and delicate bead. The nose is pure and lifted, with notes of green and yellow apple, citrus zest, white flowers, fresh brioche, and a subtle chalky minerality, underscored by hints of almond and crushed stone.
On the palate, this is taut, linear, and refreshingly dry, as expected from a Pas Dosé style. Crisp acidity frames flavors of lemon, grapefruit, crunchy pear, and green apple, layered with nuances of toasted bread, hazelnut, and a saline, mineral finish. The texture is creamy yet vibrant, with excellent tension and a long, clean aftertaste. As a non-vintage Metodo Classico based on high-quality Pinot Nero, it drinks beautifully on release but can evolve gracefully over 3–5 years, gaining more complexity, creaminess, and brioche notes in bottle.
Production
Sourced from carefully selected Pinot Nero vineyards in Lombardy, Moratti Cuvée More Pas Dosé draws on the cooler hills and calcareous-clay soils of the Oltrepò Pavese area, well-suited to fine sparkling wine. Grapes are typically harvested by hand to ensure pristine fruit and gentle handling, with early picking to preserve acidity and aromatic freshness. After a soft pressing to extract only the most delicate juice, the base wine is fermented in temperature-controlled conditions, then bottled for secondary fermentation using the traditional Metodo Classico. Extended aging on the lees in bottle builds texture, complexity, and the fine perlage, and the wine is released without dosage (Pas Dosé), allowing the natural structure, minerality, and character of Pinot Nero and its terroir to shine through.
Food & Serving
This Pas Dosé sparkling is a natural match for refined, seafood-driven cuisine: think oysters, crudo, sashimi, shellfish, and delicate white fish, as well as sushi and tempura. It also pairs beautifully with goat cheese, fresh mozzarella, light vegetable dishes, risotti, and simple poultry or veal preparations. Serve well-chilled at around 6–8°C (43–46°F) for maximum freshness; if you prefer a touch more aromatic openness and creaminess, let it warm just a couple of degrees in the glass. Decanting is not necessary, but opening the bottle a few minutes before serving and pouring into proper sparkling wine flutes or tulip-shaped glasses will allow the aromas and fine mousse to fully express themselves.
