Tasting Notes
In the glass, Dom Pérignon 2012 shows a luminous, pale gold color with fine, persistent bubbles that form a delicate mousse. The nose opens with layers of citrus zest, green pear, and stone fruits, supported by notes of brioche, toasted almond, white flowers, and a subtle hint of smoke and chalky minerality.
On the palate, this vintage is both creamy and tightly wound: ripe yellow fruits and nectarine unfold over a core of tense acidity and saline minerality. Hints of lemon curd, pastry cream, hazelnut, and a touch of spice add complexity, while the finish is long, dry, and precise, with a lingering impression of citrus, iodine, and chalk. Still youthful, the 2012 vintage has excellent aging potential; with proper cellaring, it should evolve beautifully over the next 10–20 years, gaining more complexity, nuttiness, and tertiary nuances.
Production
Dom Pérignon 2012 is crafted exclusively from grapes sourced from some of Champagne’s finest Grand Cru and Premier Cru vineyards, primarily in the Côte des Blancs and Montagne de Reims, where chalk-rich soils impart the signature tension and mineral backbone. The blend is typically a near-equal marriage of Chardonnay and Pinot Noir, harvested by hand to ensure optimal selection of bunches. Only fruit from a single year is used, and only when the vintage meets Dom Pérignon’s exacting standards. After gentle pressing, the must undergoes alcoholic and malolactic fermentation in stainless steel, followed by extended aging on lees in the bottle—often close to a decade—before disgorgement. This long maturation under cork is key to the wine’s depth, fine mousse and complex, autolytic character.

This 2012 vintage pairs beautifully with refined dishes that highlight both its richness and mineral tension: think oysters, caviar, sashimi, lobster, scallops, or delicately prepared white fish. It also complements poultry in light cream sauces, truffle-based dishes, and aged hard cheeses. For optimal enjoyment, serve well-chilled at 8–10°C (46–50°F). Younger bottles benefit from 15–20 minutes in the glass to open up; decanting is generally not necessary, but a larger-bowled Champagne glass or white wine glass will help reveal its full aromatic complexity.
