Liberty School Cabernet Sauvignon 2023 is a classic California Cabernet from Paso Robles, offering generous fruit, polished texture and impressive value. Made by three generations of winemakers at Hope Family Wines since 1975, Liberty School has become a trusted reference for approachable, consistently well-crafted Cabernet Sauvignon.

Tasting Notes
Deep ruby-red in colour, this Cabernet opens with aromas of fresh vanilla, ripe red fruit and subtle herbal notes. The palate is full-bodied and rounded, with flavours of cherry, cocoa and sweet oak supported by clear yet well-integrated tannins. A smooth, lingering finish gives the wine its characteristic easy-drinking Liberty School style. The cooler, wetter 2023 growing season resulted in a slower ripening period, helping the grapes retain freshness while achieving full maturity during the warm autumn. The wine is enjoyable now and should develop well through approximately 2030, gaining further softness and integration with time in bottle.

Production
The grapes are sourced from seven of Paso Robles’ eleven districts, with key contributions from Estrella, El Pomar, Geneseo and Paso Robles Highlands. The varied terroirs include limestone-rich gravel and ancient marine deposits, adding layers of structure and complexity. Harvest took place between 27 October and 8 November, with each parcel fermented separately in stainless-steel tanks. The wine then matured for 15 months in a combination of French and American oak barrels, around 10% of which were new, before gentle crossflow filtration and bottling in January 2025.

Food & Serving
A versatile Cabernet Sauvignon for grilled steak, roast or braised beef, barbecue, meat-based pasta dishes and burgers. It also pairs well with firm or lightly aged cheeses, while its smooth texture makes it enjoyable on its own. Serve at 16–18°C; decanting is not essential, but 30–45 minutes in a decanter can help open the aromas and soften the tannins.
