Kissinger-Bähr Sauvignon Blanc Bio 2023 is a distinctive Rheinhessen white that puts site and texture ahead of overt Sauvignon Blanc fruit. Made from organically farmed grapes, it pairs bright freshness with a gently smoky, mineral character.

Tasting Notes
Pale in appearance, it opens with subtle aromas of herbs and wildflowers, followed by crisp apple and pear. Rather than leading with exuberant tropical fruit, the nose is restrained, with a delicate smoky, slightly reductive note.

Production
The wine comes from 26-year-old Sauvignon Blanc vines rooted in loess and limestone. The supplied notes describe maturation in barrel followed by time in stainless steel, with the wine bottled unfiltered; they refer to the 2022 vintage, however, so these details may not apply exactly to the 2023 bottling. Its palate is fresh and precise, with pronounced minerality, lively acidity and a faint, food-friendly tannic grip. Enjoy it while its freshness is prominent; its longer-term aging potential is not specified.

Food & Serving
Serve lightly chilled, around 8–10°C, with grilled fish, shellfish, goat’s cheese or fresh herb dishes. Its crisp acidity and mineral edge also make it a good match for asparagus and vegetable-led plates. Decanting is not essential; opening the bottle shortly before serving should be sufficient.
