Kellerei Bozen Mock Sauvignon 2025 is a refined, aromatic Sauvignon Blanc from Alto Adige DOC in northern Italy. Made entirely from Sauvignon Blanc, it combines the grape’s vibrant herbal character with the freshness and elegance associated with the region’s mountain-influenced terroir.

Tasting Notes
The wine is straw yellow with attractive greenish reflections. Its expressive nose opens with notes of tomato leaf, nettle, green pepper and fresh mint, followed by yellow peach, pink grapefruit, acacia and elderflower. On the palate, it is fruity and well balanced, with delicate acidity, good structure and a long, persistent finish. With further bottle age, the wine can develop more pronounced mineral nuances, including subtle flinty notes. It is already enjoyable in its youth, when its freshness and aromatic clarity are at their most vivid.

Production
Produced under the Alto Adige DOC appellation from 100% Sauvignon Blanc, the wine reflects the freshness and aromatic precision of Alto Adige’s varied Alpine terroir. Careful vinification focuses on preserving the grape’s characteristic aromas while maintaining balance, structure and a clean, vibrant finish. The wine is bottled at 14% alcohol in a 0.75-litre bottle.

Food & Serving
Serve well chilled at approximately 8–10°C. Its herbal freshness and lively acidity make it a natural partner for asparagus, grilled vegetables, fresh goat’s cheese, seafood, sushi and light pasta dishes with herb-based sauces. It also pairs well with poultry and delicate fish preparations. Decanting is not necessary; open shortly before serving to allow the aromas to express themselves.
