Description

Johannes Zillinger’s NUMEN Riesling is an organic, hands-off expression of Riesling from the Weinviertel, made with an unusual fermentation that takes place inside intact grapes. Sourced from vines more than 40 years old, it offers a distinctive alternative to conventionally made Riesling, combining ripe fruit with focused freshness and mineral depth.

Tasting Notes
The wine is described as clear and expressive, with aromas of fully ripe stone fruit—especially apricot—alongside herbs and a deep, chalky, smoky spice. On the palate, it is slender yet concentrated, with firm, fine tannins, balanced acidity and a chalk-like mineral character. The finish is notably long. Its capacity to age is not specified.

Production
The grapes come from more than 40-year-old vines rooted in calcareous sandstone in a north-east-facing hollow. They are carefully hand-harvested intact for intracellular fermentation, which takes place inside the whole berries rather than in crushed grapes or free-run must. After gentle pressing, the wine rests on its full lees for over a year without intervention, then is bottled unfiltered and untreated.

Food & Serving
Try it with roast chicken, grilled river fish, or dishes featuring herbs and earthy vegetables; its ripe fruit and mineral edge should also suit aged hard cheese. Serve lightly chilled, around 10–12°C. A short rest in the glass can help its layered aromas open; decanting is optional.
