Description
Johannes Zillinger’s NUMEN Fumé Blanc is an organic Sauvignon Blanc from Austria’s Weinviertel, made in the winery’s uncompromising natural-wine style. The NUMEN series takes its name from a concept in religious metaphysics and celebrates the forces of nature in the cellar; its reputation was further cemented when the 2017 Fumé Blanc was named Austria’s best alternative wine by Gault Millau in its 2020 guide.
Production
Zillinger describes the NUMEN wines as being made without intervention in the cellar and bottled in a completely natural state. Specific details about the 2022 wine’s vineyard sites, harvesting methods and vinification are not available here.
Food & Serving
Sauvignon Blanc is a natural match for goat’s cheese, fresh herbs, asparagus and simply prepared fish or shellfish. Serve lightly chilled, around 10–12°C. A brief period in a carafe may help the wine open, though decanting is not essential.
