Production
Graacher Himmelreich is a steep, highly regarded Mosel vineyard known for its slate-rich soils and favourable exposure, conditions that help Riesling retain its distinctive acidity while developing elegant fruit character. Eiswein is made from grapes left on the vine until they freeze naturally, allowing frozen water to be separated during pressing and concentrating the sugars, acidity and flavour compounds. Food & Serving
Serve well chilled at approximately 8–10°C. This concentrated Eiswein is excellent as an aperitif or alongside fruit-based desserts, crème brûlée, vanilla desserts, blue cheese and foie gras. It can also be enjoyed on its own, allowing its mature sweetness and acidity to take centre stage. Decanting is generally not necessary; instead, open carefully and pour gently, particularly if sediment has formed during its long time in bottle.
