Tasting Notes

Grapes are typically harvested in the cool of early morning to preserve freshness and aromatic purity. In the cellar, fermentation takes place in temperature-controlled stainless steel to emphasize clarity, fruit and terroir, with aging on fine lees to add a touch of texture and complexity while keeping the profile clean, precise and unmistakably Chablis.

Jean Gagnerot Chablis 2024 is a natural partner for seafood of all kinds—think freshly shucked oysters, prawns, grilled fish, sushi and ceviche—as well as simple dishes like goat cheese salads, steamed mussels or roast chicken with lemon and herbs. Serve well chilled, ideally around 8–10°C (46–50°F), to highlight its freshness and mineral edge. Decanting is not necessary, but pouring it into a good white wine glass and giving it a few minutes in the glass will help the aromatics open up nicely.
