Hyacinth Chenin Blanc 2025

Hyacinth Chenin Blanc 2025 is a fresh, silky and contemporary expression of South Africa’s signature white grape. Sourced from old bush vines across the Coastal Region, it combines granite-derived minerality with citrus freshness, ripe fruit and refined texture. Chenin Blanc has a long history in South Africa and remains one of the country’s most distinctive and versatile varieties.

Tasting Notes
Bright and pale in appearance, the wine opens with inviting aromas of citrus, pear, stone fruit, white flowers and a subtle suggestion of honey. On the palate, lively acidity meets ripe fruit and elegant structure, while three months on the lees add a smooth, lightly creamy texture without masking the wine’s freshness. The finish is clean, mineral and gently saline. Enjoy it in its youth for maximum vibrancy, or cellar it for a few years to allow greater texture and complexity to develop.

Production
The wine is a blend of fruit from three distinctive areas: old bush vines in Wellington contribute depth and structure, Stellenbosch brings citrus lift and freshness, and Paarl adds ripe fruit and body. The vineyards are planted in weathered granite soils and benefit from the cooling influence of the nearby ocean. The Chenin Blanc is fermented partly in stainless steel tanks and partly in older oak barrels, then matured on its lees for three months. This approach builds finesse and texture while preserving the grape’s natural mineral character.

Food & Serving
Serve well chilled at approximately 8–10°C. Hyacinth Chenin Blanc is an excellent aperitif and pairs beautifully with seafood, shellfish, grilled vegetables, salads, goat’s cheese, lightly spiced Asian-inspired dishes and poultry. Decanting is not necessary, although allowing the wine a few minutes in the glass can reveal additional floral and stone-fruit aromas.

Hyacinth Wines was founded with the aim of producing expressive, high-quality wines at accessible prices, with a focus on freshness, moderate alcohol and the natural character of the grapes. Working with fruit from the microclimates of Stellenbosch, Wellington and surrounding areas, the house creates wines that balance acidity, minerality and elegance. The wines are made under the guidance of Rüdger van Wyk, a Stellenbosch University graduate and former Cape Winemakers Guild protégé who has gained experience at renowned estates including Kanonkop and Stark-Condé. His minimal-intervention approach allows the character of each vineyard and vintage to remain at the centre of the wine.
