Holger Koch’s Herrenstück Pinot Noir comes from Baden, a German region well suited to elegant, expressive Pinot. The available tasting and production details relate to the 2021 vintage, so the 2025 bottling may show some differences.

Tasting Notes
For the 2021 vintage, the wine was described as fragrant with dark berries, sour cherry and earthy, mineral notes. The palate was fresh and juicy, with lively acidity, earthy spice and silky tannins. No specific aging guidance is available for the 2025 vintage. The 2021 notes suggest a Pinot Noir that is appealing in its freshness and can be enjoyed young; any longer-term cellaring will depend on the character of the current vintage.

Production
Details supplied for the 2021 vintage describe hand-picked grapes from Dijon-derived Pinot Noir vines, spontaneously fermented on the skins for 18 days, then aged for 11 months in 300- and 500-litre wooden casks. Two-thirds of that vintage was bottled unfiltered, while the remainder received a gentle coarse filtration; sulphur use was below 30 mg/l. These methods are not confirmed for the 2025 vintage.

Food & Serving
Try Pinot Noir with roast chicken, duck, pork, mushroom dishes or softly aged cheeses. Serve slightly cool, around 14–16°C. A brief airing in the glass should be enough; decant gently for 20–30 minutes if the wine seems closed.
