Tasting Notes
Pears and peaches lead on the nose, joined by delicate acacia and hawthorn blossom. With time, the bouquet may develop notes of honey and a subtle, intriguing petroleum-like character.
Dry and enveloping on the palate, the wine balances lively freshness with a pronounced mineral edge and a long, persistent finish. Its structure and acidity give it the potential to develop for up to ten years under suitable cellaring conditions.
Production
The grapes come from vineyards around Monleale in the Colli Tortonesi, at about 250 metres above sea level, with south-west, south and east-facing exposures. Their calcareous, silty soils contribute to the wine’s mineral character and structure. Hand-harvested in late September, the grapes undergo three days of cold skin maceration, followed by static settling. Spontaneous fermentation with native yeasts takes place in cement vats over 25 days; the wine then spends ten months in stainless steel and around seven months resting in bottle.
Food & Serving
Pair it with grilled or baked fish, shellfish, roast chicken, or fresh cheeses; its acidity and mineral edge also complement vegetable dishes with herbs. Serve lightly chilled, around 10–12°C. Decanting is not essential for a young bottle, though a little time in the glass—or a short decant for a more developed vintage—can help open up its aromas.
