Description
Foradori Fuoripista Pinot Grigio is an organic, artisan orange wine from Trentino’s Vigneti delle Dolomiti, offering a distinctive alternative to conventionally made Pinot Grigio. Its copper-tinged colour, extended skin contact and amphora ageing give it remarkable texture and depth, while preserving the freshness and mineral character of the Dolomites. The wine is the result of a collaboration between Elisabetta Foradori and biodynamic grower Marco Devigili, created to reveal Pinot Grigio’s more expressive, terroir-driven side.
Tasting Notes
In the glass, Fuoripista shows captivating copper and amber hues. The nose combines ripe yellow fruit with toasted nuts, sweet spices and pronounced mineral nuances, complemented by subtle wild-flower notes. On the palate, it is full-bodied and deeply textured, with the gentle grip of skin contact creating an almost tannic sensation. Despite its concentration, the wine remains energetic and precise, finishing with refreshing acidity, a distinctly salty character and persistent mineral length.
This is a structured Pinot Grigio that can develop further complexity in bottle, with its fruit, spice and savoury nuances becoming increasingly integrated over time. As an unfiltered wine, natural variation and light sediment may occur.
Production
The grapes are sourced from the Campo Rotaliano area around Mezzolombardo, where alluvial, gravel-rich soils contribute both tension and mineral definition. Following careful organic vineyard management, the grapes undergo extended skin maceration for more than eight months in terracotta amphorae, or tinajas. This traditional approach extracts colour, aroma and tactile complexity while allowing the wine to retain freshness. Fuoripista is then bottled without filtration, preserving the wine’s natural character and full aromatic expression.
Food & Serving
Serve slightly chilled at around 12–14°C, allowing the wine to open gradually in a broad glass. Decanting is not essential, but a short decant of 30–60 minutes can help integrate its youthful structure and reveal additional aromatic depth; pour carefully if sediment is present. Its body and savoury texture make it an excellent match for roasted poultry, grilled or smoked fish, shellfish, mushroom dishes, creamy risotto, aged cheeses and richly seasoned vegetarian cuisine.
Producer
Elisabetta Foradori is one of Trentino’s most respected wine producers, widely recognised for championing expressive, terroir-focused wines and for her pioneering work with biodynamic viticulture. The estate is particularly associated with the region’s native Teroldego grape, while projects such as Fuoripista explore alternative interpretations of Trentino’s vineyards. Made with Marco Devigili, this limited production of approximately 10,000 bottles reflects a precise, hands-on approach and a strong connection to the alluvial landscapes of Campo Rotaliano and the surrounding Dolomites.
