Tasting Notes
In the glass, Feral Nr. 3 Red shows an intense, opaque beetroot red with violet reflections, almost reminiscent of a young, concentrated red wine. The nose is immediately expressive: dark berry fruit and wild blueberries meet notes of forest floor, subtle smoke and a distinctly herbal, spicy character. Hints of black pepper, dried thyme and gentle oak lend a savory, almost brooding complexity. On the palate, this still beverage is powerful and multi-layered. The base is a carefully fermented red beet preparation combined with wild blueberry juice, chosen for their natural color, earthy-sweet depth and tannin-like texture. Selected botanicals – black pepper, thyme and chili – along with oak components are infused or macerated to layer in spice, structure and a subtle impression of barrel aging. While there are no grapes involved, the approach mirrors artisanal winemaking: controlled fermentation, careful extraction and a focus on balance, mouthfeel and gastronomic versatility.

Food & Serving
This is a serious table companion for umami-rich and plant-forward cuisine. It pairs beautifully with grilled or roasted mushrooms, lentil stews and curries, baked eggplant dishes, miso-glazed vegetables, and pan-fried or braised tempeh and tofu.
