Description
Feral Drinks Feral Nr. 1 White is a finely crafted, alcohol-free fermented beverage made from white beet, subtly refined with hops, chili, and Szechuan pepper. Designed as a serious alternative to wine, it offers layered complexity, precise balance, and a refreshingly dry profile at 0.0% ABV. Hailing from Italy’s Trentino–Südtirol region, it reflects the area’s spirit of innovation, where alpine freshness meets modern fermentation craft.
Tasting Notes
In the glass, Feral Nr. 1 White shows a pale, almost translucent straw hue, with a delicate luminosity that hints at its freshness and vibrancy. The nose opens with dancing citrus notes and a gentle floral character from the hop aromatics, underpinned by subtle blossom and a faint vegetal nuance from the fermented white beet.
On the palate, a juicy, mouthwatering acidity immediately takes the lead, balanced by a fine, discreet sweetness. Flavors of lychee, white peach, and citrus zest unfold gradually, supported by a soft, rounded texture. The Szechuan pepper brings its signature tingling, citrusy heat, lingering on the finish with a playful, palate-awakening prickle rather than aggressive spice. While intended for early drinking to capture its brightness and lift, it has enough structure and complexity to evolve interestingly over the short term if kept well-chilled and stored upright.
Production
Crafted in Trentino–Südtirol, Feral Nr. 1 White draws on the region’s cool alpine climate and clean mountain influences, which naturally favor crisp, high-acid profiles. The base is carefully selected white beet, harvested at optimal ripeness for both natural sweetness and aromatic clarity. The beets are gently processed and fermented to create a dry, structured base free from alcohol, then infused with hops, chili, and Szechuan pepper to build layers of aroma and flavor. The vinification-style approach—meticulous temperature control, slow fermentation, and careful blending—results in a beverage that behaves in the glass more like a fine white wine than a typical soft drink, despite its 0.0% ABV.
Food & Serving
Feral Nr. 1 White is a natural partner for bright, vegetable-forward dishes and tangy cheeses. It shines alongside a fresh lentil salad with goat cheese, where its acidity and subtle sweetness lift the earthy lentils and cut through the creaminess of the cheese, making wine entirely optional. It also pairs beautifully with lightly spiced Asian-inspired cuisine, citrusy salads, ceviche, fresh goat and feta cheeses, and delicate dishes featuring herbs and mild chili. Serve well-chilled at around 6–8 °C. Decanting is not necessary, but pouring into a proper white wine glass allows its aromatic complexity and Szechuan-driven lift to fully express.
Producer
Feral Drinks operates out of Località Maso Parti 2A in Trentino–Südtirol, a region known for its precision-driven white wines and clean, mountain-inflected flavors. Instead of following the classic winery path, Feral focuses on avant-garde, fermentation-based, alcohol-free beverages designed to sit confidently at the same table as fine wine. By borrowing techniques and sensibilities from modern winemaking—attention to terroir, balance, and gastronomic compatibility—Feral has become part of a new wave of producers redefining what premium, non-alcoholic drinking can be, particularly in the context of serious food pairing.
