Fèlsina Maestro Raro Cabernet Sauvignon 2020 is a refined Tuscan expression of one of the world’s most celebrated grape varieties. Sourced from prime hillside parcels in the heart of Chianti Classico, it brings together the structure of Cabernet Sauvignon with the depth, elegance and earth-driven character of Fèlsina’s terroir. First produced in 1987, Maestro Raro has since become a benchmark for Cabernet in Tuscany.
Tasting Notes
In the glass, the 2020 Maestro Raro shows a deep, concentrated ruby color with subtle violet reflections at the rim. The nose opens with dark cassis, black cherry and plum layered over notes that may recall graphite, cedar, tobacco leaf and a hint of dried Mediterranean herbs, reflecting its Tuscan origins.
On the palate, this is a structured yet polished Cabernet Sauvignon, with ripe, finely knit tannins and a lively, savory backbone. Expect flavors of blackcurrant, blackberry and dark cherry, supported by hints of spice, cocoa, and a mineral edge that gives length and definition. The finish is long and persistent, suggesting excellent aging potential. While already approachable with some air in its youth, this 2020 vintage should develop greater complexity and harmony over the next 8–15 years, and potentially longer in optimal cellaring conditions.
Production
The Cabernet Sauvignon grapes for Maestro Raro come from the Rancia Piccola and Poggiolo vineyards in the very core of Fèlsina’s estate, with Rancia Piccola—also called Mastro Raro—lying adjacent to the famed Rancia vineyard. These hillside sites benefit from a classic Fèlsina terroir of well-drained, stony soils and a mix of altitude, exposure and diurnal temperature swings that promote slow, even ripening and concentrated fruit. The grapes are hand-harvested at optimal maturity and carefully sorted before vinification. Fermentation typically takes place in temperature-controlled vessels, with extended maceration on the skins to extract color, aroma and fine tannins, followed by maturation in oak to refine structure and build complexity, while still allowing the underlying Tuscan character of the Cabernet to shine.
Food & Serving
Maestro Raro 2020 is a natural partner for rich, savory dishes. It pairs beautifully with bistecca alla fiorentina, grilled or roasted red meats, game, braised lamb, and aged hard cheeses such as Parmigiano Reggiano or pecorino. It also works well with hearty stews and dishes featuring mushrooms or truffles. Serve at 16–18°C (60–64°F) for optimal expression. Decanting for about 1–2 hours before serving is recommended in its youth to allow the aromatics to open and the tannins to soften.
