Tasting Notes
In the glass, Drappier Carte d’Or Brut shows a deep golden hue with a fine, persistent mousse that forms a delicate crown at the rim. The nose is generous and expressive, with aromas of ripe stone fruits—especially apricot and peach—alongside Williams pear, citrus zest, and hints of white flowers. Subtle notes of brioche, honey, and light spices emerge with a little air, reflecting its ageing on the lees. On the palate, the wine is full-flavoured and dry, driven by Pinot Noir’s structure and intensity. You’ll find flavours of juicy yellow fruit, red apple, and a touch of raspberry, underpinned by a chalky minerality from the Kimmeridgian limestone soils. The texture is creamy yet taut, with vibrant acidity keeping everything fresh and lifted. The finish is long and mouthwatering, with lingering notes of citrus, pastry and a faint hint of almond. As a non-vintage Brut, it’s crafted for immediate pleasure but will hold nicely for several years in the cellar, gaining a bit more complexity and rounded texture over time.

Production
The grapes for Carte d’Or come primarily from the Drappier family’s vineyards around Urville in the Côte des Bar, in the southern part of France’s Champagne region. Here, Pinot Noir thrives on sunny slopes of Kimmeridgian limestone and clay, giving wines with depth, fruit and a distinct mineral line. The fruit is harvested by hand to ensure careful selection, then gently pressed, with vinification carried out mostly in temperature-controlled stainless-steel tanks to preserve freshness and purity. A significant proportion of Pinot Noir, supported by Chardonnay and Pinot Meunier, forms the blend. Malolactic fermentation is typically allowed, contributing to the cuvée’s generous, approachable style, and Drappier is known for working with low sulphur levels and minimal intervention. After the prise de mousse (secondary fermentation in bottle), the wine ages on its lees—often beyond the appellation minimum—before disgorgement and a moderate Brut dosage, allowing the natural character of the fruit and terroir to shine.

Food & Serving
Carte d’Or is wonderfully versatile at the table. It’s excellent as an aperitif, but it also pairs beautifully with seafood tartare, sushi, sashimi, grilled prawns, or simply prepared white fish. Its body and Pinot Noir backbone make it a fine match for roast chicken, charcuterie, lightly spiced Asian dishes, and soft cheeses such as Brie or Chaource. Serve well chilled at around 8–10°C (46–50°F) to highlight its freshness and finesse. A brief 10–15 minutes in an open bottle or in a larger glass is usually enough to let the aromas unfurl; extended decanting is not necessary, though you can gently carafe it for special occasions to emphasize its fruit and complexity.
