Description

Domaine Thierry Allemand’s Cornas Chaillot 2019 is a deeply coloured, expressive Syrah from one of the Northern Rhône’s most distinctive appellations. Cornas has a long tradition of producing characterful, age-worthy wines, and this bottling brings dark fruit, floral detail and savoury spice together with impressive energy.

Tasting Notes
Opaque violet in the glass, it opens with intense aromas of dark berries, potpourri and olive paste, lifted by mineral notes and cracked pepper. The palate is generous, with black and blue fruit, cola, candied violet and gingerbread, balanced by freshness and well-integrated tannins. Blue-fruit character carries through the focused, persistent finish, alongside a lingering floral note. Its structure suggests that it can develop further in the cellar; decanting can help reveal its aromas when enjoyed young.

Food & Serving
Enjoy with grilled or slow-roasted lamb, beef, game or dishes featuring olives and Mediterranean herbs. Serve at around 16–18°C. If opening now, decant for about an hour to allow the wine to open up.
