Domaine Paul Pillot’s 2018 Chassagne-Montrachet 1er Cru La Grande Montagne is a refined white Burgundy with an appealing balance of richness, freshness and mineral precision. From one of Chassagne-Montrachet’s premier cru vineyards, it showcases the elegance and age-worthy character for which the Côte de Beaune is renowned.
Tasting Notes
Bright and inviting in the glass, this Chardonnay opens with a graceful bouquet of fresh pear and vibrant citrus oil, complemented by a delicate note of almond paste. On the palate, it is medium- to full-bodied, silky and beautifully layered, combining a rich, textured mouthfeel with a lively core of ripe fruit. The finish is long and chalky, leaving a precise mineral impression. It is already expressive, yet should develop further complexity with careful cellaring over the coming years.
Food & Serving
Serve lightly chilled at approximately 10–12°C to allow the wine’s texture and aromatic detail to unfold. It would pair beautifully with roasted or grilled fish, shellfish, poultry in a creamy sauce, lobster, and dishes featuring mushrooms or subtle almond flavours. Decanting is not essential when young, although a short period in a carafe can help reveal its layered character; older bottles are best opened carefully and served directly once settled.
