Domaine Paul Pillot’s 2023 Chassagne-Montrachet 1er Cru Les Champs Gain combines the precision of a cool, limestone-driven site with the generous texture associated with the appellation. This is a beautifully proportioned white Burgundy, marked by notable freshness, tension and mineral definition. Chassagne-Montrachet has long been one of Burgundy’s most respected white-wine villages, and Les Champs Gain is among its prized Premier Cru climats.

Tasting Notes
In the glass, the wine shows a bright, pale golden colour. Its aromatic profile opens with ripe peach, mint-tinged pear and delicate white flowers, creating an inviting balance between fruit, freshness and floral lift. The palate is medium- to full-bodied, taut and distinctly chalky, with excellent energy and proportion. Its mineral structure carries the fruit through a long, focused finish. With its combination of concentration and acidity, the 2023 should develop beautifully over the medium term, gaining further complexity with bottle age while retaining its freshness.

Food & Serving
Serve lightly chilled at around 11–13°C, allowing the wine to open gradually in the glass. It will pair particularly well with roast or grilled fish, shellfish, lobster, poultry in a creamy sauce and delicate dishes featuring mushrooms or fresh herbs. Decanting is not essential, but a brief decant of 20–30 minutes can help reveal the wine’s floral and mineral nuances in its youth.
