Domaine Paul Pillot’s 2018 Chassagne-Montrachet 1er Cru Les Caillerets is a refined white Burgundy from one of the Côte de Beaune’s most respected appellations. Made from Chardonnay, it combines generous depth with striking precision, highlighting the age-worthy character that has made Chassagne-Montrachet a benchmark for premium Burgundy whites.
Tasting Notes
The wine opens with a bright, elegant profile and a layered bouquet of crisp Anjou pear, citrus zest, freshly baked bread, nutmeg and a subtle struck-match note. On the palate, it is medium- to full-bodied, deep and finely structured, with impressive precision, a pronounced mineral-like bite and a firm, persistent finish.
Its concentration and taut structure give it excellent ageing potential. While already expressive, the wine should gain further complexity with time in bottle, developing richer nutty, savoury and toasted nuances alongside its citrus and mineral character.
Food & Serving
Serve lightly chilled at approximately 10–12°C, allowing the wine to warm gradually in the glass. It is a natural match for roasted or grilled fish, shellfish, lobster, poultry in a creamy sauce and dishes featuring mushrooms or beurre blanc. Decanting is not essential, but a brief decant of 20–30 minutes can help reveal its layered aromatics and soften its youthful structure.
