Description

Domaine Paul Pillot’s Chassagne-Montrachet 2023 is a refined white Burgundy that combines generous fruit with a poised, satin-textured palate. From one of Burgundy’s most celebrated appellations for Chardonnay, it offers an inviting balance of aromatic richness, freshness and fine-grained texture.

Tasting Notes
The wine is expected to show a bright golden hue in the glass. Its expressive nose brings together honeyed peach, delicate nutmeg and the comforting aroma of freshly baked bread. On the palate, it is medium- to full-bodied, generous and richly textured, with a smooth, satin-like character and a well-integrated, harmonious finish. It is approachable in its youth, while its depth and structure should allow it to develop further with short- to medium-term cellaring.

Food & Serving
Serve lightly chilled at approximately 10–12°C to allow its aromas and texture to fully emerge. It would pair beautifully with roast chicken, grilled or pan-seared fish, shellfish, creamy pasta, poultry in a light sauce and mature soft cheeses. Decanting is not essential, although 15–20 minutes of aeration in a glass or carafe can help reveal its breadth.
