Domaine des Roches Neuves Terres Chaudes is an organic Saumur-Champigny made from Cabernet Franc grown on two distinguished parcels in and around Saumur. From mature, approximately 45-year-old vines and aged in large wooden casks, the 2022 vintage combines vibrant Loire freshness with expressive red-fruit character and remarkable precision. One of the parcels, Poyeux, is also associated with the renowned Clos Rougeard estate.

Tasting Notes
Bright ruby in colour, the wine opens with an inviting bouquet of red berries and blackcurrants, followed by subtle roasted pepper, earthy and herbal nuances, and a delicate lifted, almost ethereal note. With air, the fruit becomes more vibrant and expressive, while gentle lactic nuances emerge from the malolactic fermentation. On the palate, it is slender, precise and elegantly structured, with harmonious acidity carrying the flavours through a fresh, refined finish. The mature Cabernet Franc brings depth without heaviness, making this a poised and highly drinkable Saumur-Champigny. It can be enjoyed now after some aeration, but should develop further over the next several years as its fruit, savoury character and texture integrate.

Production
The Cabernet Franc comes from two parcels: Les Dares in Chaintres, just south of Saumur, and Poyeux within Saumur itself. The approximately 45-year-old vines benefit from the distinctive limestone-rich terroir of the area, which helps give the wine its characteristic freshness and precision. The grapes are partially destemmed before fermentation, followed by maturation in large wooden casks, allowing the fruit and mineral character to develop without excessive oak influence. The wine is produced organically.

Food & Serving
Serve lightly cool, at around 14–16°C. Terres Chaudes is a natural partner for roast chicken, duck, pork, lamb, grilled sausages and earthy vegetarian dishes such as mushroom tart, lentils or roasted beetroot. Decant for 30–60 minutes when serving young to allow the aromatic complexity to unfold; older bottles generally require only gentle aeration.
