Crafted from 100% Pinot Noir and certified organic, this rosé delivers pure, unmasked fruit expression with zero dosage (Brut Nature), making it as close to the vineyard as Champagne gets. The Les Fontaines parcel in the Côte des Bar has quickly gained a following among serious Champagne lovers for its precision, energy, and characterful rosés.

Tasting Notes
In the glass, Les Fontaines Rosé shows a luminous pale salmon to onion-skin hue, with fine, persistent bubbles that form a delicate mousse. The nose is precise and expressive, offering notes of wild strawberries, redcurrants, blood orange zest, and pomegranate, layered with hints of rose petal, white pepper, chalky minerality, and a subtle touch of brioche from aging on the lees. On the palate, this Brut Nature is bone-dry yet beautifully balanced, driven by tension and clarity rather than richness. Crunchy red berry fruit and grapefruit mingle with rhubarb, a touch of cranberry, and a saline, chalk-inflected backbone. The texture is silky but taut, with vibrant acidity and a long, linear finish that carries gentle citrus bitterness and stony minerality. Enjoyable now for its youthful energy and precision, it will continue to develop more complexity and integration over the next 3–5 years, gaining subtle savory and autolytic notes while retaining freshness.

Production
Domaine de Bichery is based in the Côte des Bar, the southernmost part of Champagne, where Kimmeridgian limestone and clay soils give Pinot Noir both depth and freshness. The estate farms organically, favoring biodiversity and low yields to capture the purity of the Les Fontaines terroir. Grapes are harvested by hand at optimal ripeness, with meticulous sorting in the vineyard and at the cellar. Vinification typically involves gentle pressing of whole clusters, spontaneous fermentation with indigenous yeasts, and a mix of stainless steel and neutral oak to preserve fruit while adding textural nuance. The wine then undergoes its secondary fermentation in bottle and ages sur lie for an extended period before disgorgement, with no dosage added (Brut Nature) to let the site and the vintage speak clearly.

Food & Serving
This precise, dry rosé Champagne is a versatile partner at the table. It shines with delicate dishes such as salmon or tuna tartare, sushi and sashimi, and ceviche, but also works beautifully with charcuterie, smoked trout, roasted beet salads, grilled prawns, and light poultry dishes with herbs. Its structure and acidity can handle soft cheeses like goat’s cheese or young Comté, and it is an excellent aperitif for those who prefer a dry, incisive style. Serve well chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in a decanter or simply in the glass allows the aromatics to open, especially if served closer to 10°C.
