Tasting Notes
The wine presents a bright golden colour. Its nose is layered and expressive, with aromas of ripe pear, yellow apple, lemon zest and white flowers, complemented by subtle notes of toasted almond, brioche and finely integrated oak. On the palate, it is elegant and concentrated, balancing creamy orchard-fruit flavours with lively acidity and a distinct chalky, mineral finish. The 2017 vintage is approachable now with careful aeration, but should continue to gain complexity over the next several years.

Production
The Caillerets vineyard is one of Chassagne-Montrachet’s celebrated Premier Cru sites, known for its limestone-rich soils and excellent drainage—conditions that encourage Chardonnay with both depth and freshness. Burgundy’s relatively small parcels are generally farmed with great attention to detail and harvested by hand, while the wine’s character is shaped through traditional Burgundy vinification and maturation in oak. Food & Serving
Serve lightly chilled at around 11–13°C, allowing the wine to open gradually in the glass. It is an excellent match for roasted or grilled fish, shellfish, chicken in a light cream sauce, veal, lobster, and dishes featuring mushrooms or beurre blanc. A short decant of 20–30 minutes can help reveal its aromatic depth, although older bottles are best handled gently and served directly from the bottle.
