This cuvée showcases the purest expression of chalk-rich terroir, delivering a wine that is both precise and deeply elegant. With its extra brut dosage, it offers a beautifully dry, mineral-driven style that appeals to lovers of classic, terroir-focused Champagne.

Tasting Notes
In the glass, this Blanc de Blancs displays a pale, luminous straw color with fine, persistent bubbles forming a delicate mousse. On the nose, expect an elegant bouquet of white flowers, lemon zest, green apple and pear, layered with notes of chalk, brioche and a subtle hint of roasted nuts. The palate is tense, vibrant and focused, with a racy line of acidity that frames flavors of citrus, crisp orchard fruits and a touch of stone fruit. The chalky minerality from the Côte des Blancs is front and center, lending finesse and length, while the extra brut dosage keeps the wine bone-dry yet finely balanced. The finish is long, saline and precise, suggesting this cuvée can develop additional complexity over the next 5–8 years, while already drinking beautifully now for those who enjoy fresh, crystalline Champagne.

Production
Sourced exclusively from Grand Cru vineyards in the Côte des Blancs, this champagne is rooted in some of Champagne’s most prized chalk soils, renowned for giving Chardonnay its laser-like tension and finesse. Vines grow on steep, well-drained slopes, benefiting from optimal sun exposure and cool, continental influences that preserve acidity. Grapes are typically hand-harvested at optimal ripeness to protect fruit integrity, then gently pressed to extract the purest juice. Fermentation takes place in temperature-controlled conditions, with malolactic fermentation often encouraged to harmonize the wine’s natural acidity. The base wines are carefully assembled, and the cuvée matures for an extended period on its lees in bottle, building texture, complexity and fine bubbles before disgorgement and a restrained extra brut dosage.

Food & Serving
This Champagne is a natural partner for refined, delicate dishes: think oysters, scallop carpaccio, caviar, sushi and sashimi, or simply a platter of fresh shellfish. It also pairs beautifully with goat cheese, light fish dishes in citrus or beurre blanc sauces, and subtly seasoned poultry. Serve well-chilled at around 8–10°C (46–50°F) to highlight its precision and minerality. A brief 10–15 minutes in the glass or a quick, light decant in a carafe can help the wine open up aromatically, especially if served with more complex dishes.
