Diebolt Vallois Champagne à Cramant Blanc de Blancs Extra Brut is a vibrant, finely etched Champagne crafted exclusively from Chardonnay grown in the heart of the Côte des Blancs. This non-vintage cuvée showcases the pure, chalk-driven elegance that has made Cramant one of Champagne’s most revered villages. With its extra brut dosage, it offers a particularly precise and dry expression, ideal for those who appreciate tension, finesse, and mineral clarity in their Champagne.

Tasting Notes
In the glass, this Blanc de Blancs shows a pale straw to light gold hue, animated by a very fine, persistent mousse. The nose is delicate yet focused, with aromas of lemon zest, green apple, white flowers, chalk, and fresh brioche, supported by hints of almond, wet stone, and a subtle saline edge. On the palate, it is lively and taut, driven by bright citrus, crisp pear, and orchard fruit, layered with notes of toasted hazelnut, pastry, and a distinct chalky minerality that lingers on the finish. The extra brut style (low dosage) keeps the wine dry and racy, highlighting freshness and precision rather than sweetness. Structure and acidity suggest that, while it is beautifully approachable now as an aperitif, it also has the capacity to evolve for several years in bottle, gaining additional depth, creaminess, and complexity with time on cork.

Production
Sourced from Chardonnay vines planted on the pure chalk slopes around Cramant in the Côte des Blancs, this Champagne draws its character from some of the region’s most prized terroir. The cool climate and chalk-rich subsoils give naturally high acidity, finesse, and a distinctive mineral profile. Grapes are typically harvested by hand to ensure careful selection and preserve the integrity of the bunches. In the cellar, the must is gently pressed and vinified primarily in temperature-controlled tanks, with some reserve wines often used to bring extra depth and consistency to the blend. Extended aging on the lees adds texture, fine bubbles, and subtle brioche notes, while the extra brut dosage keeps the final wine very dry, emphasizing purity and terroir character.

Food & Serving
This Champagne is particularly well-suited as an aperitif, where its freshness and fine mousse stimulate the palate without overwhelming it. It pairs beautifully with oysters, scallops, and other shellfish, as well as sushi, sashimi, light seafood tartares, and delicately prepared white fish. It can also complement simple appetizers such as gougères, lightly salted nuts, and fresh goat cheese. Serve well-chilled at about 8–10°C (46–50°F). A brief opening in the glass is usually sufficient; decanting is not necessary, but pouring into proper tulip-shaped Champagne glasses rather than flutes will help reveal its aromatic complexity.
