Tasting Notes
In the glass, Princes Blanc de Blancs pours a pale, luminous straw color with fine, persistent bubbles forming a delicate mousse. The nose is pure and expressive, offering notes of lemon zest, green apple, white flowers, and chalky minerality, supported by subtle hints of brioche and fresh almonds from extended aging on the lees. On the palate, this Champagne is taut and vibrant, yet beautifully rounded. Crisp citrus, pear, and Granny Smith apple are layered with nuances of white peach, hazelnut, and a touch of pastry cream. The chalk-driven minerality from Champagne’s limestone soils gives the wine a precise, linear structure, while the dosage is kept in balance, ensuring a dry, mouthwatering finish. Production
Princes Blanc de Blancs is sourced exclusively from Chardonnay vineyards in the Champagne region of France, with a focus on premier terroirs known for their chalk and limestone-rich soils that impart tension and finesse. Grapes are harvested by hand to ensure strict selection and protect the delicate berries. After gentle pressing, the must is vinified in stainless steel to preserve freshness and purity of fruit, with malolactic fermentation typically encouraged for added texture and harmony. The cuvée is then assembled from multiple vineyard sites and reserve wines, before undergoing secondary fermentation in bottle and extended aging on the lees, which lends its fine mousse, creaminess, and subtle autolytic complexity.

This Blanc de Blancs is a natural match for refined, delicate dishes: think oysters, shellfish platters, scallops carpaccio, sushi, sashimi, caviar, or lightly grilled white fish. It also shines alongside goat cheese, fresh cheeses, tempura vegetables, and elegant canapés. Serve well-chilled at 8–10°C (46–50°F) to highlight its freshness and precision. A brief 10–15 minutes in the glass or a narrow decanter can help the aromas blossom, but extended decanting is not necessary—this Champagne is crafted for immediate enjoyment and finesse.
