David Moret Saint-Romain 2023

David Moret’s Saint-Romain 2023 is a Chardonnay from one of the Côte de Beaune’s higher, cooler appellations, offering a fresh perspective on white Burgundy. Saint-Romain’s elevated vineyards—reaching around 400 metres—set it apart from many of the region’s better-known sites and can lend its wines a particularly lively character.

Tasting Notes
The tasting note available is for the 2017 vintage, so it should be treated as a guide to the wine’s style rather than a definitive description of the 2023. That earlier vintage was described as pale and fresh, with a cool bouquet of citrus, nuts and a gentle buttery note. On the palate, it was creamy and concentrated yet finely textured, with bright acidity and a distinctly Burgundian freshness.

Food & Serving
Serve lightly chilled, around 10–12°C. Its fresh acidity and creamy Chardonnay character should pair well with roast chicken, grilled fish, shellfish or a mild, nutty cheese. A short spell in a decanter—or simply allowing the wine to breathe in the glass—may help it open up; avoid prolonged aeration unless the wine seems especially reserved.
