David Léclapart Champagne 1er Cru L'Aphrodisiaque Pas Dosé is an unapologetically pure, intensely expressive grower Champagne crafted from Premier Cru vineyards in the village of Trépail. Made from Chardonnay and Pinot Noir with zero dosage, it showcases the terroir in its most unadorned, mineral-driven form. This is one of Léclapart’s most elusive and sought‑after cuvées, produced in tiny quantities and cherished by serious Champagne collectors and sommeliers.
Tasting Notes
In the glass, L'Aphrodisiaque presents a luminous, deep lemon-gold hue with a fine, persistent bead that speaks to meticulous craftsmanship. The nose is complex and evolving: notes of ripe orchard fruits and citrus zest intertwine with toasted hazelnut, brioche, chalk dust, and delicate floral tones, underpinned by subtle spice and a gentle oxidative nuance from barrel aging.
On the palate, this is both powerful and finely etched. The zero dosage highlights a taut, saline backbone and vibrant acidity, yet the texture remains generous and creamy thanks to extended lees contact. Flavors of baked apple, lemon curd, yellow plum, and candied citrus peel are layered with roasted nuts, honeyed hints, and a distinct chalky minerality that lingers long on the finish. Still youthful on release, it has the structure and concentration to age beautifully for 8–12 years or more, gaining additional depth, tertiary complexity, and harmony over time.
Production
L'Aphrodisiaque is sourced from biodynamically farmed Premier Cru parcels around Trépail, on the Montagne de Reims, where chalk-rich soils and cool exposures produce wines of tension, precision, and energy. David Léclapart works with low yields and meticulous, manual vineyard care, following biodynamic principles to capture maximum expression of place. Grapes are harvested by hand at optimal ripeness, then gently pressed and fermented with indigenous yeasts, often in oak barrels, to encourage texture and complexity. Malolactic fermentation may be allowed or blocked depending on the vintage’s balance, and the wine is aged extensively on its lees before bottling. True to its “Pas Dosé” designation, there is no dosage added at disgorgement, allowing the natural balance of fruit, acidity, and minerality to shine through without any sweetness.
Food & Serving
This Champagne is a superb partner for refined, flavorful dishes: try it with oysters, scallop carpaccio, turbot or sole with beurre blanc, lobster, or rich shellfish pastas. It also pairs beautifully with roasted poultry, guinea fowl, mushroom dishes, and aged hard cheeses where its structure and minerality can cut through richness. Serve well chilled but not icy, ideally at 8–10°C (46–50°F), to let the aromatics fully express themselves. A gentle decant, or pouring into larger white wine glasses and allowing it a few minutes in the glass, can help the wine open up and reveal its full complexity.
