Description
Corte Sant’Alda’s Ca’ Fiui is a biodynamically farmed Valpolicella that shows how the region’s lighter, everyday style can still be serious and well structured. Made from traditional local varieties, it offers a more considered alternative to the often simplistic Valpolicella found in casual dining spots.

Production
The vines grow at around 350 metres above sea level on partly poor soils with a south-easterly aspect. They are farmed biodynamically and hand harvested. The blend comprises 50% Corvina Grossa, 30% Corvina, 15% Rondinella and 5% Molinara, with spontaneous fermentation in 4,000-litre oak vats.
Food & Serving
Serve slightly cool, around 14–16°C, with pizza, tomato-based pasta, cured meats or grilled vegetables. A brief time in a decanter can help open the wine, though it should also be enjoyable without decanting.
