Clos St Antonin sources the Grenache for this Côtes du Rhône from organically farmed vineyards in the southern Rhône Valley, where the terroir is dominated by well-draining sandy and clay-limestone soils, with pockets of galets roulés (rounded river stones) that store daytime heat and release it at night. The Mediterranean climate—sunny days, cool nights, and the cleansing influence of the Mistral wind—helps maintain both ripeness and healthy grapes, essential for a no-added-sulfur wine. Grapes are harvested by hand at optimal ripeness to ensure intact, pristine fruit, then sorted carefully in the cellar. Vinification focuses on gentle extraction to highlight Grenache’s perfume and silkiness: fermentation takes place in temperature-controlled vats using indigenous or carefully selected neutral yeasts, with minimal pump-overs. No sulfur is added during vinification or bottling, and élevage is typically done in concrete or neutral vessels to preserve the wine’s fresh, unmasked fruit character.
