The vineyards are typically farmed with great attention to detail, with careful canopy management to preserve aromatic freshness and achieve optimal ripeness in Sauvignon Blanc, Sémillon and Muscadelle. Grapes are harvested by hand in small parcels, allowing for selective picking at ideal maturity. In the cellar, gentle pressing and precise temperature control during fermentation help protect the pure, vibrant aromatics of the varieties. A portion of the wine is aged in French oak barrels (often with a mix of new and used wood) on fine lees, with regular stirring (bâtonnage) to build texture and complexity while preserving the wine’s tension and mineral character.
