From Saint-Émilion’s limestone plateau, Château Canon 2016 is a poised, precise expression of the appellation, blending 74% Merlot with 26% Cabernet Franc. Owned by Chanel since 1996, the estate has a long-standing place among the region’s leading producers; this vintage has also earned strong praise from major wine critics.

Tasting Notes
The nose opens with violets and red roses, followed by kirsch, blackcurrant and plum, with notes of liquorice, spice, truffle and crushed limestone. On the palate, finely grained tannins and lively acidity give the wine a graceful, energetic line, leading to a long, mineral finish. Its balance and structure suggest considerable aging potential: it can be enjoyed now with careful decanting, but should develop over several decades. The 2016 received 98+ points from Wine Advocate, 98 from Wine Enthusiast and 97 from Decanter.

Production
The vines grow on Château Canon’s limestone plateau in Saint-Émilion, a distinctive setting reflected in the wine’s mineral character. The vintage is composed of 74% Merlot and 26% Cabernet Franc and matured for 18 months in French barriques, 70% of them new. Harvesting and vinification methods were not specified.

Food & Serving
Serve at around 16–18°C. It pairs well with roast lamb, beef, game or richly flavoured mushroom dishes, whose savoury depth complements the wine’s fruit and mineral notes. Decant for two to three hours before serving to give the wine time to open.
