Grapes are typically harvested by hand at optimal ripeness to ensure careful selection of bunches. In the winery, the fruit is gently destemmed and fermented in small lots to capture the vineyard’s character, with temperature control to protect delicate aromatics. Aging takes place in oak barrels—often with a proportion of new French oak—to add complexity, soft tannins, and subtle notes of vanilla and spice without overwhelming the purity of the fruit.
