Vinification typically involves a combination of stainless steel and French oak: stainless steel fermentation preserves the vivid fruit character and freshness, while fermentation and aging in carefully chosen French oak barrels add texture, depth and subtle toasty, vanilla nuances. After fermentation, the wine is matured in French oak to refine its structure, build mid-palate creaminess and seamlessly integrate oak and fruit.
