Description
Cavicchioli Lambrusco di Sorbara Vigna del Cristo Secco 2025 is a refined expression of Emilia-Romagna’s distinctive sparkling red grape. Made exclusively from Lambrusco di Sorbara, it combines a luminous rosé colour, vibrant acidity and elegant floral fruit with the dry, refreshing character that makes this style so versatile. The wine comes from the celebrated Vigna del Cristo vineyard, created in 1987 to mark the 60th anniversary of Cavicchioli’s historic family winery, founded in 1928.
Tasting Notes
Bright rosé in appearance, the wine is animated by a lively mousse with subtle violet hues. Its fragrant bouquet opens with intense notes of cherry and strawberry, complemented by delicate floral aromas of violet.
On the palate, it is generous and enveloping from the first sip, with pronounced acidity providing energy and excellent drinkability. A refined saline finish adds definition to the fresh berry fruit. As a young, unoaked sparkling wine, it is best enjoyed for its freshness and aromatic vibrancy, ideally within the first few years of release.
Production
The grapes are grown in the historic Vigna del Cristo parcel within the Lambrusco di Sorbara DOC zone near Modena, between the Panaro and Secchia rivers. The area’s alluvial sandy soils help preserve aromatic clarity and contribute to the grape’s characteristic, lively acidity. After a careful manual harvest, the grapes are gently pressed to protect their delicate fruit and floral character. The second fermentation takes place in pressurised tanks using the Charmat method, which preserves the wine’s freshness and vibrant aromatics. An eight-month maturation period helps integrate the structure, acidity and dry finish.
Food & Serving
Serve well chilled at approximately 8–10°C. Its crisp acidity, dry style and saline finish make it an excellent match for the robust flavours of Emilia-Romagna, including cured meats, mortadella, tortellini, lasagne and aged cheeses. It also works beautifully with pizza, savoury appetisers and fried dishes. Decanting is not recommended; serve directly from a chilled bottle to preserve the wine’s mousse and freshness.

Founded in Modena in 1928, Cavicchioli is one of Emilia-Romagna’s best-known specialists in Lambrusco. The winery has played an important role in showcasing the region’s native sparkling wines, with particular attention to the character of individual vineyards and local grape varieties. Vigna del Cristo was established in 1987 as a tribute to the family winery’s 60th anniversary and refers to an exclusive five-hectare vineyard in Sorbara. Its wines are recognised for expressing the bright fruit, floral elegance and refreshing acidity that define Lambrusco di Sorbara.
