Cascina San Pietro Franciacorta Pas Dosé Cuvée Terre dei Trici 2020 is a refined, Chardonnay-only sparkling wine from Lombardy, made according to the traditional method with no added dosage. Aged for at least 48 months on its lees, this millesimato combines Franciacorta’s elegant richness with a distinctly dry, mineral character and fine, persistent bubbles.

Tasting Notes
Brilliant and pale in appearance, the wine shows a fine, continuous perlage and a gently creamy mousse. Its aromatic profile brings together toasted notes with fresh citrus, lemon verbena and broom, followed by hints of exotic fruit. On the palate, it is precise and energetic, with lively acidity, pronounced salinity and a delicate creaminess that creates a beautifully balanced finish. Thanks to its structure and extended lees ageing, it can develop further complexity over the next several years when stored properly.

Production
The Chardonnay grapes come from vineyards in Cazzago San Martino, planted on moraine soils formed by ancient glacial deposits. The estate follows environmentally respectful practices, with careful yield regulation to preserve healthy fruit and the distinctive character of the terroir. The oldest vines are harvested by hand, and the whole bunches reach the winery within two hours. After gentle whole-cluster pressing, only the free-run juice is used. Fermentation takes place in stainless steel, while a portion of the wine is matured in small barrels for around eight months. The final blend is bottled and undergoes a slow second fermentation and at least 48 months of lees ageing before disgorgement, with no dosage added.

Food & Serving
Serve well chilled at approximately 8–10°C in a tulip-shaped sparkling wine glass to highlight both its aromas and texture. Its dry, saline profile is particularly well suited to delicate starters, raw or lightly prepared seafood, white fish, shellfish and fresh or medium-aged cheeses. Decanting is not normally necessary, although allowing the wine a few minutes in the glass can help reveal its toasted and mineral nuances.
