Description

Carsten Saalwächter’s 2023 Grauburgunder is made from vines, some more than 50 years old, rooted in the limestone soils of Ingelheimer Berg. Its traditional élevage in large wooden casks and extended time on the lees give this Rheinhessen Pinot Gris a distinctive, thoughtfully crafted character.

Tasting Notes
Open and approachable in its youth, the wine shows a classic Grauburgunder profile. Ripe pear leads on the nose, joined by delicate nutty and almond-like brioche notes, with subtle reductive nuances adding complexity.

Production
The grapes are hand-harvested, with only healthy, sound fruit selected. After a short period of maceration, the must is gently pressed and fermented in large wooden casks, where both alcoholic and malolactic fermentation take place. The wine then matures on its full lees for two winters before being bottled unfiltered.

Food & Serving
Try it with roast chicken, pork, creamy mushroom dishes or mature Alpine cheeses. Serve lightly chilled, around 10–12°C. It can be enjoyed without decanting; a little time in the glass will allow its aromas to open.
