Its extended four-year aging on the fine lees gives it a remarkable sense of depth, precision, and finesse, with the kind of freshness and complexity that make Brut Nature styles so compelling.

Tasting Notes
Pale straw in the glass with a lively, persistent mousse, it shows a clean and luminous appearance that hints at its mountain origin. The bouquet is fresh and elegant, with notes of citrus, green apple, white flowers, and subtle brioche and almond nuances from extended lees aging. On the palate, it is crisp, linear, and beautifully dry, with fine bubbles, bright acidity, and a mineral edge that reflects the cool alpine terroir. The Chardonnay brings poise and delicacy, while the long lees contact adds texture and a quietly creamy finish. This wine has good short- to medium-term aging potential, during which it can gain even more nuance and complexity.

Production
This Brut Nature is made from Chardonnay grown in Kaltern Caldaro’s highest vineyards in Trentino-Alto Adige, where cool temperatures and altitude help preserve acidity and aromatic purity. The grapes are harvested with care to ensure freshness, then vinified for sparkling wine production and aged for four years on the fine lees, allowing the wine to develop complexity, structure, and its refined Brut Nature style with no added dosage.

Food & Serving
Ideal with oysters, scallops, sushi, sashimi, delicate white fish, and light antipasti, as well as salty snacks or simple alpine-style dishes. Serve well chilled at 6–8°C, and decanting is not recommended; instead, open shortly before serving to preserve its lively mousse and freshness.
