Tasting Notes
In the glass, it shows a bright straw-yellow color that signals purity and freshness. The nose opens with lively aromas of elderflower and gooseberry, layered with hints of exotic fruit for added depth and charm. On the palate, it is all about crisp, juicy fruit balanced by a pronounced mineral backbone, giving the wine both energy and definition. The finish is long and fruit-driven, with enough structure to suggest it will remain attractive over the next few years, best enjoyed while its aromatic brightness is at its peak.

Production
The grapes come from hillside vineyards in Alto Adige, planted between 350 and 450 meters above sea level on south- and east-facing slopes, where the terroir provides ideal exposure and freshness. Harvested only when fully ripe and perfectly healthy, the fruit is destemmed, given an 8-hour cold maceration at 10°C, then gently pressed before natural settling and fermentation at a controlled 16–18°C. The wine is matured for four months on fine lees in stainless steel tanks to preserve its aromatic precision and mineral clarity.

Food & Serving
Caldaro Sauvignon 2025 pairs beautifully with fresh seafood, shellfish, asparagus, goat’s cheese, light salads, and dishes with herbs or green vegetables. Serve it well chilled at around 8–10°C, and decanting is not necessary.
