Bonnet-Gilmert Champagne Grand Cru Blanc de Blancs Brut La Réserve is a refined grower Champagne crafted exclusively from Chardonnay in some of the finest chalk soils of the Côte des Blancs. Sourced from Grand Cru vineyards and bottled as a non-vintage cuvée, it captures the house’s signature style: pure, mineral and elegantly textured. This is a Blanc de Blancs that balances precision and charm, making it as at home as an aperitif as it is at the table.
Tasting Notes
In the glass, La Réserve shows a luminous pale gold colour with delicate, persistent bubbles that form a fine, creamy mousse. The nose is refined and expressive, offering notes of lemon zest, green apple, white flowers and freshly baked brioche, layered with hints of chalk, almond and a touch of saline minerality.
On the palate, this Grand Cru Blanc de Blancs is precise and vibrant, with a racy, citrus-driven attack that unfolds into flavours of ripe pear, crisp apple and subtle stone fruit. The mid-palate is silky and finely textured, supported by vivacious acidity and a distinct chalky backbone from the Côte des Blancs terroir. The finish is long, dry and mouthwatering, with lingering notes of citrus peel, toasted hazelnut and minerality. Enjoyable now for its freshness and finesse, it also has the structure and balance to evolve gracefully over the next 5–7 years, gaining more complexity and creaminess with bottle age.
Production
Bonnet-Gilmert is based in the heart of the Côte des Blancs, where Chardonnay reigns supreme and the deep chalk subsoils of Grand Cru villages impart an unmistakable tension and minerality. The fruit for La Réserve is sourced from meticulously tended Grand Cru parcels, harvested by hand to ensure optimal selection of bunches. After gentle pressing in traditional Champagne presses, the clear juice is fermented in temperature-controlled stainless steel to preserve purity and aromatics, with selected reserve wines blended in to achieve a consistent house style. The wine then undergoes secondary fermentation in bottle and is aged for an extended period on its lees, allowing it to develop complexity, fine bubbles and a creamy texture before disgorgement and a carefully judged Brut dosage.
Food & Serving
This Champagne is a natural partner for elegant, delicately flavoured dishes. Think oysters on the half shell, scallop carpaccio, sushi and sashimi, or simply prepared white fish with citrus and herbs. It also shines alongside goat cheese, soft bloomy-rind cheeses, caviar and lightly truffled dishes. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness and finesse. A brief 10–15 minutes in the glass or a quick, gentle decant in a chilled carafe can help the aromas open up, especially if serving with food.
