Description

Bolla Recioto della Valpolicella Classico 2021 is a rich, barrel-aged red dessert wine made from the classic local blend of Corvina, Corvinone and Rondinella. Rooted in the historic Valpolicella tradition of drying grapes to concentrate their character, it balances natural sweetness with refreshing acidity.

Tasting Notes
Deep ruby-red with violet highlights, it has a creamy, velvety texture. The expressive aromas bring together ripe cherries, plums in liqueur and raisins, with notes of cocoa, vanilla and sweet spice on the palate. Fresh acidity keeps the finish clean and lingering.

Production
The grapes come from the Classico area around San Pietro in Cariano, near Verona, where grape drying has a long history. Carefully selected, healthy bunches are harvested late in October and dried indoors until March to concentrate their sugars. After cold maceration, fermentation proceeds slowly and is stopped naturally to retain the wine’s sweetness; the wine then spends around twelve months in barrels to round its character.

Food & Serving
Enjoy as a meditation wine, or serve it with jam tartlets and dark chocolate. Serve slightly cool, around 12–14°C; decanting is generally unnecessary, though a short time in the glass can help its aromas open.
