Billecart-Salmon Cuvée Elisabeth Rosé 2008 Giftbox

Billecart-Salmon Cuvée Elisabeth Rosé 2008 is an elegant, aromatic vintage Champagne, presented in a giftbox. First made in 1988 as a tribute to co-founder Elisabeth Salmon, this celebrated rosé combines Pinot Noir and Chardonnay from some of Champagne’s finest Grand Cru vineyards.

Tasting Notes
Its salmon-pink colour is lifted by a fine, persistent mousse. The nose opens with fresh red berries, rose petals and citrus zest, followed by notes of fig, white peach and crisp macaroon.

Production
The blend comprises 55% Pinot Noir and 45% Chardonnay sourced from Grand Cru vineyards. The grapes are vinified as white wine, with 10% Pinot Noir vinified as a red wine added to give the Champagne its rosé character. Harvesting methods and further details of the vinification and ageing are not specified.

Food & Serving
Enjoy with refined seafood, such as lobster or salmon, or alongside roast poultry and delicate dishes with citrus or aromatic spices. Serve well chilled, around 8–10°C. Decanting is generally unnecessary for Champagne; allow it a little time in the glass to reveal its aromas.

Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and Elisabeth Salmon. The house is known for its Champagnes from the Champagne region, and this cuvée honours Elisabeth Salmon, whose role in the founding story is remembered in its name.
