Tasting Notes
In the glass, it shows a bright, luminous ruby-red color. The nose is dominated by juicy red berries, especially raspberry, with a fresh, precise aromatic profile that reflects both the Pinot Noir grape and its stony origin. On the palate, the wine is vibrant and refined, with a supple texture, good tension, and a subtle mineral edge that keeps the fruit focused and energetic.
The oak remains discreet, supporting the wine’s structure without masking its purity. While already appealing in its youth, it should gain additional harmony and complexity over the next few years, making it a charming Burgundy with mid-term aging potential.
Production
“Les Grands Chaillots” comes from a single parcel in the southern sector of Nuits-Saint-Georges, where the name “Chaillots” refers to the abundant pebbles and gravel in the soil. These iron-rich, well-drained soils contribute freshness, structure, and a distinct mineral nuance. The grapes are fully destemmed, then aged exclusively in used oak barrels, including classic barriques as well as larger 350- and 500-liter casks, allowing the wine to develop texture while preserving its fruit.
Food & Serving
This Bourgogne Rouge is a versatile partner for dishes such as roast chicken, duck breast, mushroom risotto, veal, game birds, or gently aged cheeses. Serve slightly cool, ideally around 14–16°C, to keep the wine’s freshness and aromatic lift at the fore. Decanting is not essential, but a short aeration can help the wine open up if enjoyed young.
