Bernard Defaix Chablis 2023 is a bright, mineral-driven Chardonnay that captures the classic clarity and tension of Chablis. Tasting Notes
In the glass, it shows a very fresh, clear profile with a subtle green rim. The nose is clean and mineral, with chalky limestone notes layered over citrus and green apple. On the palate, it is crisp and refreshing, with lively acidity and fine, focused fruit. Flavours of citrus and grapefruit come through clearly, supported by a stony, saline edge that gives the wine its unmistakable Chablis character. Best enjoyed young for its freshness, though it will hold well for a few years as it gains a little more roundness.

Production
The Chardonnay comes from Bernard Defaix’s own 12 hectares of vineyards in the heart of Chablis, with vines averaging around 35 years of age. The terroir is typical of the region, lending the wine its signature mineral and chalky precision. After harvest, the grapes are carefully selected before pressing, and fermentation and maturation take place in temperature-controlled stainless steel tanks to preserve freshness, purity, and aromatic lift. The wine is aged for 8–10 months before bottling.

Food & Serving
This Chablis is a natural match for light fish dishes, shellfish, oysters, and simple seafood preparations where its freshness can shine. It also works beautifully with goat’s cheese, sushi, or delicate chicken dishes. Serve chilled at 8–10°C, and decanting is not necessary.
