Named for the site’s former life as a working dairy farm, Dairyman has quickly become one of Belle Glos’ most sought‑after bottlings and a benchmark for opulent New World Pinot Noir.

Tasting Notes
In the glass, the 2021 Dairyman shows a deep, dark ruby to garnet hue, almost opaque at the core, with a glossy, viscous rim that hints at its concentration. The nose is intensely perfumed, offering layers of ripe black cherry, wild blackberry and raspberry compote, supported by notes of vanilla bean, cocoa, sweet baking spices, cedar and a touch of cola and violets. On the palate, this is a plush, generous Pinot Noir with a broad, mouth‑filling texture. Flavours of black cherry, marionberry and spiced plum are wrapped in tones of caramelized oak, mocha, clove and a subtle hint of toasted coconut. Fine-grained tannins and well‑integrated oak give structure, while a lift of Russian River Valley acidity keeps the finish from feeling heavy, extending it with notes of cherry liqueur, baking spice and a touch of smoked herbs. While already very approachable and hedonistic in its youth, the 2021 vintage has the stuffing to evolve gracefully over the next 5–7 years, gaining more savoury complexity and silkiness with time in bottle.

Production
The Dairyman Vineyard lies in the cool Russian River Valley of Sonoma County, not far from the Pacific, where morning fog and afternoon breezes temper the California sunshine. Planted on well‑drained alluvial and Goldridge sandy loam soils, the site yields low‑to‑moderate crops of intensely flavoured Pinot Noir. Grapes are typically harvested in the cool of night or early morning to preserve freshness and aromatic purity, with careful sorting in the winery to ensure only pristine fruit is used. Fermentation usually begins with a cold soak to draw out colour and aroma, followed by a warm fermentation in small tanks to build richness and extract fine tannins. After pressing, the wine is aged in French oak barrels—often with a high proportion of new oak—to impart spice, structure and that signature Belle Glos creaminess, before bottling with minimal fining to retain texture and character.

Belle Glos Dairyman Pinot Noir 2021 is a natural partner for richly flavoured dishes that can match its depth and intensity. Think herb‑roasted duck, glazed pork belly, seared salmon with a soy‑maple reduction, mushroom risotto, or grilled lamb chops with rosemary and garlic; it also works beautifully with truffle dishes and aged semi‑hard cheeses. Serve slightly below room temperature, around 15–17°C (59–63°F), to keep the fruit vibrant and the alcohol in balance. Decanting for 30–60 minutes before serving will help the aromatics open and allow the oak to integrate further, particularly in its first few years after release.
