Tasting Notes

In the cellar, Aubry employs gentle pressing of whole clusters, followed by fermentation in stainless steel and, for some lots, neutral oak to add subtle texture and complexity. The different base wines—often from multiple years—are blended to achieve the house style, then bottled for secondary fermentation and extended lees aging. A short, restrained dosage at disgorgement keeps the profile dry and focused, highlighting the natural freshness of the fruit and the underlying Premier Cru terroir.
