Antoine Bouvet Champagne Saignée de Bisseuil Rosé Extra Brut is a refined Pinot Noir Champagne made in the saignée style, where the wine gains its colour and character through brief contact with the grape skins. Its Extra Brut profile offers a dry, vibrant expression with the freshness and precision expected from Champagne, while the Bisseuil origin adds a distinct sense of place.

Tasting Notes
The wine is expected to show a delicate salmon-pink hue, with an energetic stream of fine bubbles. On the nose, look for aromas of red berries, wild strawberry, raspberry and subtle floral tones, complemented by fresh citrus and a gently savoury nuance. The palate is dry and lively, combining bright acidity with flavours of redcurrant, cranberry and ripe raspberry. Pinot Noir gives the wine a structured, vinous character, while the Extra Brut style keeps the finish crisp and refreshing. It can be enjoyed now for its freshness, or cellared for a few years to allow greater roundness and complexity to develop.

Production
Produced from Pinot Noir in and around Bisseuil, a Premier Cru village in Champagne’s Vallée de la Marne, this rosé is made using the traditional saignée method. The grapes undergo a short period of skin contact to extract colour, flavour and structure before pressing and fermentation. As an Extra Brut Champagne, it contains very little dosage, allowing the fruit, acidity and terroir to remain at the forefront. Specific details regarding harvesting, bottle ageing and dosage are not provided.

Food & Serving
Serve well chilled at approximately 8–10°C in a tulip-shaped Champagne glass. Its dry, berry-driven style pairs beautifully with smoked salmon, tuna tartare, sushi, roast poultry and charcuterie, while its structure also makes it a natural match for duck with red-fruit sauce. Decanting is not recommended; open shortly before serving to preserve the wine’s delicate bubbles and freshness.
